Why you'll like it

If you've never cooked Lion's Mane, this is the recipe. Three main ingredients, one skillet, ten minutes. The butter and garlic let the mushroom's flavor shine without covering it. If this doesn't convince you, nothing will.

Preparation

    Prep the Lion's Mane

    Chop the Lion's Mane into medium pieces, bite-sized. Don't tear it with your hands. Cut it with a knife so the browning comes out even.

    300 g of Lion's Mane mushroom, fresh, in medium pieces

    Heat the skillet

    Put the skillet over medium-high heat for 1 to 2 minutes until it's really hot. Add the butter. When it starts to bubble, not smoke, it's ready.

    40 g of Unsalted butter, about 1.5 tablespoons
  3. 03

    Sauté

    Add the Lion's Mane in a single layer. Leave it still for 3 to 4 minutes without moving it. Flip and brown another 3 to 4 minutes on the other side. You're looking for golden edges, almost crispy.

    Add the garlic

    When the Lion's Mane is browned, lower to medium heat and add the chopped garlic. Stir constantly for 30 to 60 seconds, just enough to release fragrance without burning.

    Season and serve

    Turn off the heat. Season with salt and pepper. Sprinkle parsley if you want. Serve with lime wedges on the side. Eat hot.

Fungivore tip

Salt the Lion's Mane AFTER browning, never before. Salt draws out water from the mushroom and kills the browning. Wait until you have crispy edges, then season.

Variations

Change something, it's still yours

Vegan

Swap the butter for olive oil. Add 1 teaspoon nutritional yeast at the end for a cheesy flavor.

Spicy

Add half a Guajillo chile in strips along with the garlic.

With miso

Replace 1 teaspoon of the salt with 1 teaspoon miso paste. Stir it in at the end, off the heat.
